Easy Pico de Gallo with Avocado, Black Beans and Fresh Corn
- 3 large red tomatoes, chopped
- 1 medium onion, chopped
- 1 jalapeño pepper, diced
- 1 avocado, peeled and chopped
- 1 ear of corn, cooked and kernels removed
- 1 cup canned black beans, rinsed
- 1/4 cup cilantro, finely chopped
- 2-3 limes, juiced
- Kosher salt and pepper
Combine all the ingredients in a nonmetallic bowl and mix. Add the lime juice, salt and pepper to taste. Serve with tortilla chips or use it on tacos or tortillas.
