My kids like thin egg noodles and I will boil them ahead of time and toss them in with sautéed onions and carrots.
I use my hands to pick the chicken off the bone.
A couple cartons of chicken bone broth and dinner is served. I swapped out regular chicken broth for rich bone broth.

Homemade Chicken Noodle Soup
Ingredients
- 1 tablespoon olive oil
- 8 cups chicken bone broth
- 1/2 cup chopped onion
- 1 cup sliced carrot
- 6 ounces dried medium egg noodles, cooked al dente
- 1 rotisserie chicken, picked and meat chopped
- Salt and black pepper to taste
Instructions
- In a 3-quart saucepan, saute the onion and carrot in the olive oil until soft and translucent.
- Next add the bone broth, cooked noodles and chicken. Season with salt and pepper. Simmer, covered, for 15 minutes.
