I am always on the search for an easy recipe that I can make during the holiday season. When we are invited to family dinners, I always offer to contribute a dish to lessen the burden in the kitchen.

Living in the heart of Ohio, we are blessed with a well known barbecue restaurant named City Barbecue.

They are famous for their pulled pork, brisket and homemade cornbread pudding.

If you love the creamy, sweet corn casserole at City Barbecue restaurant, then you are in luck and will love this version. See the recipe card below for easy instructions.

It’s literally as easy as mixing all the ingredients together in a large bowl and baking it on medium heat. In under an hour and once the crispy edges start to show it’s ready to serve.

This recipe is as old-fashioned as mom’s famous corn pudding, and it is the perfect side casserole for your pulled barbecue sandwiches and also impressive served alongside any holiday turkey or ham dinner.

Are you tailgating? Football season is the time of year to share favorite recipes and this jiffy corn casserole is one of my favorite things to share with friends.

Then, whip up a pan of sweet corn pudding casserole and watch it disappear. It’s also easy to make a double batch. I promise there will be no leftover cornbread pudding!

Is this easy cornbread pudding simple to make?

This soufflé-type casserole is loaded with flavor and takes under an hour to make and bake in the oven.

Summer supersweet whole kernel and cream-style corn is paired with traditional cornbread mix.

Do you need more oven space during the holidays? I know I do. My oven just can’t hold it all.

Therefore, there is another solution. This recipe cooks up easily in the crock pot or slow cooker.

Simply whip together all the ingredients, dump into a slow cooker for 3-4 hours and forget about it.

And f you like it a bit cheesy, toss in a cup of your favorite shredded cheddar cheese. Everything tastes better with bacon, right? Add a little crumbled bacon for a sweet and salty kick.

This is one casserole dish you just can’t mess up. It’s has a creamy texture, is sweet and salty, and full of flavor.

What you’ll need for this recipe:

This casserole is so easy to make and just requires a few ingredients.

Corn. Use fresh corn if you have it. Otherwise, grab a can of cream-style corn as well as a can of summer supersweet whole kernel corn.

Cornbread mix. Any brand works great but I love the corn muffin mix brand best.

Egg. Any kind works, brown or white.

Butter. You’ll need a half a stick of butter.

Ingredients
  

  • 1 egg
  • 1/4 cup melted butter
  • 1 11- oz can whole kernel supersweet corn, drained
  • 1 11- oz can cream style corn
  • 1 8.5- oz box Jiffy cornbread mix
  • 1 cup plain yogurt or sour cream
  • 1/2 cup green onions, chopped (optional)

Instructions
 

  • Preheat oven to 350°F. Combine first six ingredients in a medium bowl and stir well. If you are a green onion fan, stir in a 1/2 cup chopped onions into the mix. Pour mixture into an 8-inch glass baking dish or similar dish coated with cooking spray. Bake until golden brown for 45 minutes until set.

  • This Corn bread Pudding was DELICIOUS! Super easy to make too. I did add some sugar and vanilla but that is because I like things like this to be a little sweet.

  • So would I add to regular yellow cornmeal to make this with out a box mix. and How much corn meal would I actually use. Thanks!

    • I think for this recipe you will want to stick to a corn muffin mix to make this casserole. I can’t guarantee the same taste and results otherwise.

    I am making this Right Now, just put it in the oven. I think the Entire fam Loves this dish and it’s basically a required side of me Every year at family gatherings.lol
    Yours looks so good! I did add a bit of sugar as most like it with a lil more sweetness. I doubled that batch and we’ll see if it’s done in 45.
    I made another (didn’t double this one) and added maybe 1.5 cups of a 4 cheese blend and some diced jalapeno – first time with This But I’ve heard it’s delish. We shall see- wish me luck! lol
