I’ve been a big fan of puff pastry desserts lately. The crust is thin and flaky and you get the full flavor of whatever fruit you’re putting on top.
My Rustic Apple Crumble Tart is simply an apple crostata, apple galette and apple crisp all rolled into one.
The crust is flaky and buttery and the brown sugar and oatmeal crumble topping is crunchy and sweet.
This tart takes less than a half an hour to make and is delicious served warm with a scoop of vanilla bean ice cream.

Rustic Apple Crumble Tart
Ingredients
- 1 sheet of frozen puff pastry, thawed
- 2 Honeycrisp apples, peeled, cored and cut into 1/4-inch slices
- 1/4 cup lemon juice
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/2 cup old fashioned oats
- 3 tablespoons butter, melted
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 400° F.
- Unfold one puff pastry sheet and cut off the corners to create a circle that fits nicely into into the bottom and up the sides of a tart pan. Use the puff pastry corners to fill in any areas that need little extra crust.
- Peel, core and slice the apples thinly and place them in a bowl. Drizzle lemon juice over top to keep the apples from browning.
- In a separate bowl, mix together the oats, brown sugar, flour, cinnamon and melted butter to create a crumbly topping.
- Arrange the apple slices on in the tart pan in an alternating pattern. Top the tart with the crumble and bake for 15-20 minutes on a low oven rack until the pastry sheet is golden brown.
- Cool and serve as is or with a scoop A vanilla ice cream.

I could tell you how divine this looks and mention I’ll be making it soon. But that would be a lie. The truth…and it’s a bit of a weird moment, is that my tart is in the oven. I recently found some all butter puff pastry I was dying to try and with a counter full of apples and friends coming over I put a tart together in no time; the only real difference in our recipes is one thing.
If you knew me you would have already guessed. Just a bit of booze; I mixed some Applejack and Amaretto with the apples. I can only hope it turns out so lovely!
