Easy Cornbread Pudding

I am always on the search for easy recipes that I can make at the holidays. When we are invited to family dinners, I always offer to contribute a dish to lessen the burden in the kitchen.
Living in the heart of Ohio, we are blessed with a well known barbecue restaurant named City Barbecue. They are famous for their pulled pork, brisket and cornbread pudding. If you love the creamy, sweet corn casserole at City Barbecue restaurant, you are in luck and will love this version.
It's literally as easy as mixing all the ingredients together and baking it. It's as old-fashioned as mom's famous corn pudding, and this recipe is the perfect side casserole for your pulled barbecue sandwiches and also impressive served alongside any holiday turkey or ham dinner.
Tailgating? Whip up a pan of sweet corn casserole and watch it disappear. It's also easy to make a double batch.
This soufflé-type casserole is loaded with flavor and takes under an hour to make and bake in the oven. Summer supersweet whole kernel and cream style corn is paired with traditional cornbread mix.
Who during the holidays needs more oven space? I know I do. My oven just can't hold it all.
This recipe cooks up easily in the crock pot or slow cooker. Simply whip together all the ingredients, dump into a slow cooker for 3-4 hours and forget about it.
If you like it a bit cheesy, toss in a cup of your favorite shredded cheddar cheese. Everything tastes better with bacon, right? Add a little crumbled bacon for a sweet and salty kick.
