It's literally as easy as mixing all the ingredients together and baking it. This corn pudding is the perfect side casserole for your pulled barbecue, beef brisket or chicken sandwiches and also impressive served alongside any holiday ham dinner.
This soufflé-type casserole is loaded with flavor. Sweet whole kernel and sweet cream style corn is paired with traditional cornbread.

Easy Cornbread Pudding
- 1 egg
- 1/4 cup butter, melted
- 1 11-oz can whole kernel corn, drained
- 1 11-oz can cream style corn
- 1 8.5-oz corn muffin mix
- 1 cup plain yogurt or sour cream
Preheat oven to 350°F. Combine first six ingredients in a medium bowl and stir well. Pour into an 8-inch glass baking dish or similar dish coated with cooking spray. Bake for 45 minutes until set.
Serves 8. Total time 50 minutes.
