Grape Nuts cereal transformed into breakfast cookies. This low-fat delight is teaming with healthy oats, whole wheat flour, dried cranberries and sweet white chocolate.
Post Grape Nuts cereal provides the main ingredient for this recipe. Skip the sugared cereals and serve these instead for breakfast or a healthy snack.
I've added dried cranberries and white chocolate chips to sweeten these cookies. But you could easily add raisins, dates or nuts.
These cookies freeze well. Just pull out a cookie or two when the urge strikes. A few seconds in the microwave in these cookies taste fresh from the oven.
Grape Nuts Breakfast Cookies
- 1/2 cup softened butter
- 1/2 cup firmly packed dark brown sugar
- 1/2 cup granulated sugar
- 3 tablespoons honey
- 2 eggs
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 1/2 cup dried cranberries
- 1/2 white chocolate chips
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups rolled oats
- 1/2 cup flour
- 1/2 cup whole wheat flour
- 1 cup Post Grape-Nuts cereal
Preheat oven to 350 degrees.
Using an electric mixer, beat the sugar and butter until smooth. And the honey, eggs and vanilla, mixing well. Next mix together the baking soda, salt, oats, four, dried cranberries, chocolate chips and grape nuts cereal.
Drop tablespoons of batter 2 inches apart onto greased cookie sheets and bake for 12 minutes or until golden brown. Allow the cookies to cool slightly before for moving them to wire racks to cool completely.
