Do you ever get excited when you discover something new at the grocery store that you didn't know existed. I love it when I find something new. The wheels start turning wondering how I can turn a new find into something yummly.

Crumbled goat cheese flavored with bits of apricot and thyme bring out the best flavors in this roasted turkey salad.

I discovered the most delicious crumbled goat cheese by Vermont Creamery in the deli section of my supermarket. I created this salad around the goat cheese. I love goat cheese and what could be better than the addition of apricots and thyme. 

I used a mix of fresh greens which included spinach and baby lettuces and added sweet honey crisp apples, toasted walnuts and sweetened dried cranberries. I had fresh roasted turkey on hand as well.

Instead of using a classic vinaigrette, I opted for keeping with the flavors in the salad by using a fig & walnut balsamic vinaigrette.  Doesn't that sound delicious? Sweet and nutty in a salad dressing!

The tender lettuce leaves paired with dried fruit and crunchy nuts makes the salad not only nutritious but delicious. This salad promises to be a hit.

Fresh Greens with Roasted Turkey, Apples and Walnuts

Ingredients:

  • 8 ounces fresh greens 
  • 2 ounces Vermont Creamery Crumbled Goat Cheese with Apricot and Thyme
  • 1/3 cup Mariani Sweetened Dried Cranberries
  • 1 honeycrisp apple, chopped
  • 1/3 cup toasted walnuts
  • 1/2 cup roasted turkey breast
  • Lucini Fig & Walnut Savory Balsamic Vinaigrette

Instructions:

Assemble the greens in a serving bowl. Add the turkey, walnuts, chopped apple, dried cranberries and sprinkle the top with the apricot and thyme crumbled goat cheese.  Drizzle with the fig and walnut balsamic vinaigrette and serve.

Serves four. Total time: 15 minutes.
