Celebrate St. Patrick's Day in typical fashion with Irish beer. But add one more ingredient and create a creamy, dreamy concoction I like to call "Dessert in a Glass."

Layered Irish stout and coffee ice cream play well together. Rich dark porter poured over quality ice cream results in a frothy deliciousness. Like you're sipping a frozen latte only better.
Living in Dublin, Ohio, we are used to everything Irish. Our city hosts the annual Dublin Irish Fest every summer and it attracts over 100,000 visitors. The music and cultural festival is everything Irish and so much fun all weekend long. It's a great excuse to eat and drink all things Irish.
I wanted to create a recipe for St. Patrick's Day using Irish beer. I have added Guinness beer to my pot roasts and have soaked mushrooms in the stout as well. It really adds a delicious flavor. So why not ice cream, I thought. This recipe is my version of a shamrock shake.
Roasted coffee and layered dark chocolate malt flavors in the beer are accentuated by the creamy sweet ice cream. The chocolate syrup is the whip cream on top.
So instead of green beer or if dark beer is a little too strong on its own, try this recipe instead.
Irish Stout Ice Cream Float
Serves 2. Total time: 5 minutes. Printable recipe
- 1 bottle of Guinness beer
- 4 scoops gourmet coffee ice cream (I used Haagen-Dazs)
- Chocolate syrup
Fill a desert glass with two scoops of coffee ice cream. Slowly pour the Guinness beer over the ice cream. The beer will be frothy so add it slowly. Add a drizzle of chocolate syrup on top and enjoy.
