Grated zucchini and carrots are the secret ingredients inside these breakfast treats.

I got my first taste of a double chocolate muffin made with zucchini and carrots from the grocery organic section.  The muffins were moist and sweet we were hooked. It was the sticker shock that had me searching for my own recipe.

I paid $6 for a box of four muffins because my son loved them, but I figured I could create my own, save money in the process and make a whole lot more.

Mission accomplished!

They are loaded with grated zucchini and carrots and they are not green because the secret ingredients are hidden by all that delicious chocolate.

For that chocolate two punch, you’ll need semisweet chocolate chips as well as unsweetened cocoa for this recipe. I also swapped out half a cup of all purpose flour for white whole wheat flour to make these muffins a bit healthier.

Are these muffins allergy friendly?

These muffins are nut free and allergy safe. Swap out the flour for a gluten free blend if you are looking for a gluten free option. You can also lower the sugar quantity by replacing the white sugar with unsweetened applesauce.

This recipe is super easy to whip up. The hardest part is grating the squash and zucchini. I used a steel box grater but a food processor would also work well.

My son thought they had a delicious taste and a texture more like a brownie than a muffin. I guess I could have easily baked them in a brownie pan. He said the recipe was a winner. I agree!

Double Chocolate Zucchini Muffins

Moist and delicious, these double chocolate zucchini muffins are full of fiber and whole wheat goodness.

Makes: 12 muffins

Ingredients:

  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla
  • 1/2 cup canola oil
  • 1 cup shredded zucchini
  • 1 cup shredded carrots
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all purpose flour
  • 1/2 cup white whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat the oven to 350°F. Prepare a 12 tin muffin tray with cooking spray.
  2. Using a mixer beat the eggs, sugars, oil, and vanilla making sure there are no lumps from the brown sugar.
  3. Slowly add in the flour, cocoa powder, salt, baking soda and baking powder until well mixed.
  4. Add in the chocolate chips, grated zucchini and grated carrots until just combined.
  5. Fill each muffin tin with batter and top each with a few chocolate chips. Bake for 20 minutes then cool the muffins completely before removing from the tin. Serve or freeze for later.

  • I love adding healthy ingredients to sweets! That is the only way I can get my younger son to eat any veges! It’s pathetic! I have to try the carrot and zucchini together. I usually use them separately, but together sounds great!

    • Together it adds great moisture for the best tasting cupcakes. My teens love them and I am making them all the time. It’s one way to get a few extra veggies in their diets. Thanks Beth 🙂
