Grilled Grouper with Lemon & Herbs

Grilled Grouper with Lemon & Herbs

There’s something about grilling fresh fish on a warm evening that makes dinner feel effortless. No oven to heat, very little prep and hardly any cleanup—just a beautiful piece of fish, a few fresh ingredients and the grill.

This grilled grouper with lemon and herbs is one of those recipes I come back to when I want a dinner that feels special without requiring much work. Grouper is a firm, meaty white fish with a mild flavor, so it pairs beautifully with bright lemon, olive oil and herbs without needing a heavy sauce.

The secret to keeping the fish tender is cooking it in a foil packet. The grouper gently steams in its own juices while the lemon, olive oil and herbs infuse every bite. When you open the packet, you have perfectly flaky fish and almost no mess to clean up afterward.

And the whole dinner comes together in about 30 minutes.

I love serving this grilled grouper with a simple vegetable, a fresh salad or rice to soak up the flavorful juices. It’s easy enough for a weeknight but feels right at home on a summer dinner table with family and friends.

If you’re new to cooking grouper, this is a great place to start. There’s no complicated technique and no need for a long list of ingredients—just let the grill and the foil packet do the work.

What Does Grouper Taste Like?

Grouper is a firm, flaky white fish with a mild, slightly sweet flavor. It has a meaty texture that holds up especially well on the grill, making it a great choice for foil-packet cooking.

If you’re wondering whether grouper tastes “fishy,” the answer is generally no. Its mild flavor makes it an easy fish to serve even to people who aren’t big seafood lovers.

Fresh lemon and herbs are all this fish really needs. The bright lemon cuts through the richness of the fish while the herbs add just enough flavor without overpowering it.

Why Use a Foil Packet for Grilled Fish?

Cooking grouper in a foil packet is an easy way to keep the fish moist while it cooks on the grill.

The foil traps the steam and juices inside, so the grouper gently cooks without drying out. It also keeps the lemon and herb flavors right where you want them—around the fish instead of dripping through the grill grates.

And there’s an added bonus: cleanup is practically effortless. Once dinner is finished, simply discard the foil and rinse your plate or platter.

How to Choose Fresh Grouper

Look for grouper fillets that are firm, moist and free from a strong fishy odor. The flesh should look fresh and have a clean, translucent appearance.

If fresh grouper isn’t available, frozen fillets work well, too. Choose packages without excessive frost or ice crystals and thaw the fish completely before grilling.

How to Make Grilled Grouper with Lemon & Herbs

1. Prepare the fish

Place each grouper fillet on a large sheet of heavy-duty aluminum foil. Drizzle with olive oil and fresh lemon juice, then sprinkle generously with Italian seasoning.

2. Seal the packets

Fold the foil up and around the fish, crimping the edges tightly to create a sealed packet. You want the juices and steam to stay inside while the fish cooks.

3. Grill

Heat your gas or charcoal grill to medium to medium-high heat. Place the foil packets directly on the grill grates and cook for about 10 to 12 minutes, depending on the thickness of the fillets.

4. Check for doneness

Carefully remove the packets from the grill and let them rest for about a minute before opening. The fish should be opaque, firm and flake easily with a fork. For the most reliable check, cook fish to an internal temperature of 145°F.

5. Finish with lemon

Open the packets carefully—the steam will be hot. Transfer the grouper to a serving platter and spoon some of the lemony juices from the packet over the top. Serve with fresh lemon wedges.

Tips for the Best Grilled Grouper

Use fillets of similar thickness. This helps the fish cook evenly so one piece isn’t finished before another.

Don’t overcook the fish. Grouper is lean, and overcooking can make it dry. Start checking the thickest part around the 10-minute mark.

Fresh lemon makes a difference. Bottled lemon juice doesn’t have the same bright flavor. Since lemon is one of the main flavors in this recipe, fresh is worth it.

Change up the herbs. Italian seasoning is an easy shortcut, but you can also use a combination of dried oregano, basil, parsley and rosemary. Fresh herbs work beautifully, too.

Add capers. A spoonful of capers tucked into the foil packet would add a delicious salty, briny flavor. This is also a variation readers have suggested over the years.

Don’t skip the lemon wedges. A final squeeze of fresh lemon just before serving brightens the entire dish.

What to Serve with Grilled Grouper

Because this grouper is light and fresh, I like to keep the sides simple. A fluffy rice or grain, roasted vegetables or a crisp summer salad all work beautifully.

For an easy summer dinner, serve the fish with grilled vegetables and a simple green salad. For something a little heartier, add rice, orzo or pearl couscous to soak up the lemony juices from the foil packet.

Here are a few Home & Plate favorites to serve alongside grilled grouper:

  • Orzo and Summer Roasted Vegetables – a colorful side that makes this an easy complete meal.
  • Pearl Couscous with Roasted Vegetables – hearty enough to turn the fish into a satisfying dinner.
  • Tomatoes Caprese Salad – especially good when summer tomatoes are at their peak.
  • Maple Roasted Brussels Sprouts – a simple vegetable side when you’re grilling outside.

Easy Variations

Lemon Garlic Grouper: Add a minced garlic clove to each foil packet along with the lemon and olive oil.

Grouper with Capers: Add 1 tablespoon of capers to each packet for a briny, Mediterranean-style twist.

Fresh Herb Grouper: Replace the dried Italian seasoning with chopped fresh parsley, basil, oregano or rosemary.

Grouper Tacos: Flake leftover grilled grouper and tuck it into warm tortillas with cabbage slaw, avocado and a squeeze of lime.
