Some vacations stay with you long after you’ve unpacked your suitcase. For me, it was the lemons.

During our trip to Italy’s Amalfi Coast this spring, lemons seemed to be everywhere. They flavored cakes and pastries. Bottles of limoncello filled shop windows. And, of course, they became some of the most memorable gelato I have ever tasted.

One afternoon we stopped at a little gelateria where lemon gelato was served inside a giant Amalfi lemon. Watching my son walk down the street carrying what looked like the world’s largest lemon filled with creamy gelato became one of my favorite memories from the trip.

When I came home, I couldn’t stop thinking about that bright, fresh citrus flavor.

Fortunately, I had just purchased a Ninja Creami. Recreating that unforgettable gelato quickly became one of my summer projects. After developing my Home and Plate Signature Ninja Creami Vanilla Base, I discovered that transforming it into this Italian-inspired treat was surprisingly simple. Fresh lemon juice and zest brighten the base.

A splash of authentic limoncello adds the unmistakable aroma I remember from the Amalfi Coast. Fold in pieces of buttery lemon biscotti, and every bite tastes like a little Italian vacation.

Whether you’ve been to Italy or simply dream of visiting someday, this Lemon Cookie Creami is a delicious way to bring a little taste of the Amalfi Coast home.

This recipe starts with my tried-and-true Ninja Creami Vanilla Base, the creamy foundation I developed after testing dozens of combinations to get the texture just right. Once you have the base prepared, transforming it into this bright, lemony Italian-inspired dessert takes just a few simple additions.

Inspired by Italy’s Amalfi Coast

There’s a reason lemons are synonymous with the Amalfi Coast.

Lemon gelato served inside a fresh Amalfi lemon during our trip to Italy. That unforgettable dessert became the inspiration for this Ninja Creami recipe.

One of my favorite food memories from our trip to Italy was stopping for lemon gelato on a warm afternoon along the Amalfi Coast. This wasn’t just any scoop of ice cream—it was served inside a giant Amalfi lemon with the leaves still attached.

I remember thinking there was no way homemade ice cream could capture that same bright, creamy lemon flavor. But after bringing home a bottle of authentic limoncello and spending weeks experimenting with my new Ninja Creami, I finally came surprisingly close.

The splash of limoncello gives this recipe the same fresh citrus aroma I remember from Italy, while pieces of lemon biscotti add just the right amount of buttery crunch. Every spoonful takes me right back to that sunny afternoon overlooking the Mediterranean.

While nothing quite compares to eating gelato on the Amalfi Coast, this is the recipe I’ll be making whenever I want to relive the trip.

I came home determined to recreate that same fresh lemon flavor—not as a traditional gelato, but as a Ninja Creami recipe anyone could make in their own kitchen.

Why This Recipe Works

Inspired by Amalfi Coast gelato
Fresh lemon, vanilla, and a splash of limoncello recreate the bright citrus flavor that inspired this recipe during my trip to Italy.

A creamy, scoop-shop texture
After testing countless ingredient combinations—from Greek yogurt and monk fruit to cream cheese and milk powder—I finally landed on a vanilla base that churns into incredibly smooth, rich ice cream in the Ninja Creami.

Loaded with buttery lemon biscotti
Crunchy lemon biscotti pieces are folded into the finished ice cream, adding little bursts of buttery cookie in every bite.

Limoncello makes all the difference
A splash of limoncello enhances the lemon flavor without making the ice cream taste boozy. It’s the ingredient that gives this recipe its authentic Italian-inspired flavor.

One base recipe, endless possibilities
Once you’ve mastered my vanilla Creami base, changing the flavor is as simple as swapping a few ingredients. It’s the same foundation I use for many of my favorite Ninja Creami recipes.

Kid-approved by my toughest critics
My boys love ice cream and have high standards. If a homemade version isn’t as good as their favorite store-bought brands, it doesn’t get made again. This one earned a spot in the regular rotation.

Equipment

  • Ninja Creami Ice Cream Maker
  • Ninja Creami Pint Container
  • Blender
  • Microplane or fine zester

Ingredients

Ice Cream Base

  • ¾ cup whole milk
  • ½ cup heavy cream
  • ½ cup plain low-fat Greek yogurt
  • 2 tablespoons softened cream cheese
  • 2 tablespoons nonfat dry milk powder
  • 3 tablespoons granulated sugar adjust to taste
  • 1 teaspoon vanilla bean paste
  • Pinch of salt
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons finely grated lemon zest
  • 1 tablespoon authentic limoncello (clear, not creamy)

Mix-In

  • 2-3 lemon biscotti broken into bite-sized pieces

Optional Finish

  • 1 teaspoon authentic limoncello

Instructions

  • In a blender, combine the whole milk, heavy cream, Greek yogurt, cream cheese, dry milk powder, sugar, vanilla bean paste, lemon juice, lemon zest, limoncello, and salt. Blend until completely smooth and the sugar has dissolved.
  • Pour the mixture into a Ninja Creami pint container. Do not fill past the Max Fill line. Secure the lid.
  • Place the pint on a level surface in the freezer and freeze for at least 24 hours. The base should be completely solid before spinning.
  • Remove the lid from the frozen pint and place it into the Ninja Creami outer bowl. Lock the outer bowl into the machine according to the manufacturer's instructions.
  • Select the Ice Cream function and allow the cycle to complete.
  • If the ice cream looks crumbly or powdery after the first spin (this is completely normal), add 1 to 2 tablespoons of milk and process using the Respin function. Repeat once more if needed until smooth and creamy.
  • Use a spoon to create a well down the center of the ice cream, stopping about ½ inch from the bottom of the pint. Add the broken lemon biscotti.
  • Run the Mix-In cycle.
  • For an extra burst of lemon flavor, drizzle 1 teaspoon of limoncello over the finished ice cream and gently fold it in with a spoon. Do not respin after adding the limoncello.
  • Serve immediately for the creamiest texture.

Notes

  • Freeze the pint on a completely level surface so the machine spins evenly.
  • The base must be fully frozen for at least 24 hours before spinning.
  • A crumbly texture after the first spin is normal and does not mean the recipe failed. Simply add a splash of milk and use the Respin function.
  • Avoid overfilling the pint container. Never exceed the Max Fill line.
  • Break the biscotti into small pieces so they distribute evenly throughout the ice cream.
  • Fresh lemon zest provides the brightest citrus flavor.
  • Authentic limoncello adds depth and aroma without making the ice cream overly boozy. Store leftovers in the Ninja Creami pint with the lid tightly secured.
When ready to enjoy again, place the pint back into the Ninja Creami and process using the Respin function. If needed, add 1 tablespoon of milk before respinning to restore a smooth, creamy texture.
