  • 1 shallow baking dish
  • 1 large skillet
  • 1 small bowl
  • 1 sharp knife


  • 4 cups sliced zucchini two medium zucchini
  • 2 tablespoons butter
  • Olive oil
  • ½ cup diced onion
  • 1/2 cup sour cream
  • ½ cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • ½ cup shredded Parmesan cheese
  • Kosher salt and black pepper
  • ½ cup Panko bread crumbs
  • Dried parsley


  • Preheat the oven to 375°F. Spray a shallow baking dish with non-stick cooking spray.
