12dinner rolls, sliced
Blackberry BBQ Sauce
1cupblackberries
1/2cuponions, diced
1teaspoongarlic, diced
1tablespoonolive oil
1/4cupketchup
1/2cupseedless blackberry preserves
1tablespoonaged balsamic vinegar
1tablespoonWorchestershire sauce
1teaspoonmustard
1teaspoonhoney
1teaspoonbrown sugar
1teaspoonHerbs de Provence
Instructions
Make the Pork Tenderloins
Follow the recipe for PORK TENDERLOIN. Prepare and grill the pork.
Make the BBQ sauce
Sauté the onions and garlic in 1 tablespoon of olive oil until softened. Add the blackberries and cook until softened. Add the remaining ingredients until well combined. Transfer the mixture to a blender or use a immersion blender to purée the sauce. Set the sauce aside until needed.
Fire up the grill to medium heat and grill the tenderloins until the internal temperature measures 145°F, about 20 minutes. Remove the tenderloins to a cutting board and allow to rest for 5 minutes for cutting into thin slices. Sandwich the pork between the dinner rolls and top with the blackberry barbecue sauce and serve.
