Easy Shrimp Breakfast Bowl Recipe
Serve up my version of shrimp and “grits” to start the morning with this easy and savory breakfast bowl.
- 1/2 cup Hodgson Mill Oat Bran Cereal
- 1 cup milk
- 1 cup water
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 4 ounces diced pancetta
- 1 pound shrimp, peeled and deveined peeled and deveined
Heat the oil in a skillet and add the onion, garlic and pancetta. Cook until the pancetta has become crispy. Set the pancetta aside to a bowl and add the shrimp to the pan cooking for 1 to 2 minutes per side, or until pink. Return the pancetta mixture to the pan and reduce the heat.
Prepare the oat bran cereal in a small pot. Bring half a cup of oat bran cereal, one cup of water and one cup of milk to a boil over high heat. Then reduce the heat and cook for a minute or two stirring it occasionally. Finally, stir in half a cup of shredded cheddar cheese and mix until melted.Transfer the cheesy oats bran cereal to two bowls and top with the shrimp mixture and a sprinkle of cheddar cheese.
