This tortellini pasta salad recipe is a perfect side dish featuring juicy red ripe cherry tomatoes, fresh mozzarella cheese, homegrown fresh basil and fresh tortellini.
Boil the tortellini in a large pot according to the package instructions or until al dente, then drain. Slice the tomatoes and mozzarella balls in half and place them in a large bowl. Add in the tortellini, chopped basil, olive oil and balsamic vinegar. Sprinkle with salt and pepper and toss the salad until well coated.
