Tortellini Caprese Salad
A classic summer pasta salad featuring juicy red ripe tomatoes, fresh mozzarella cheese, homegrown basil and cheesy tortellini.
- 1 pint grape tomatoes
- 8- ounce container Ciliegine (cherry sized mozzarella balls)
- 10- ounce bag cheese tortellini
- 1/4 cup chopped basil
- 1/4 cup olive oil
- 1/4 cup aged balsamic vinegar
- Kosher salt and pepper to taste
Boil the tortellini according to the package directions, then drain. Slice the tomatoes and mozzarella balls in half and place them in a bowl. Add in the tortellini, chopped basil, olive oil and balsamic vinegar. Sprinkle with salt and pepper and toss the salad until well coated.
