Granola Pancake Bake
Do you need to feed a crowd or a team of hungry athletes? Serve up my healthy protein-rich granola pancake bake for breakfast.
- 2 cups pancake mix I used Log Cabin which requires eggs, milk and oil
- 1 1/3 cup milk
- 2 eggs beaten
- 2 tablespoons canola oil
- 1 cup protein granola
- 1 cup blueberries fresh or frozen
- 3/4 cup chocolate chips
Preheat the oven to 350°F. Spray an 11x7 inch baking dish with cooking spray.
In a bowl mix together the pancake mix, milk, eggs, canola oil and granola. Stir in the blueberries and chocolate chips. Reserve a handful of chocolate chips and granola for garnishing after baking.
Pour the mix evenly into the baking dish and bake for 40 minutes or until the pancake batter has become firm and golden on top.
Immediately sprinkle a handful of chocolate chips and granola on top.
