Granola Pancake Bake

Do you need to feed a crowd or a team of hungry athletes? Serve up my healthy protein-rich granola pancake bake for breakfast.

  • 2 cups pancake mix I used Log Cabin which requires eggs, milk and oil
  • 1 1/3 cup milk
  • 2 eggs beaten
  • 2 tablespoons canola oil
  • 1 cup protein granola
  • 1 cup blueberries fresh or frozen
  • 3/4 cup chocolate chips


  • Preheat the oven to 350°F. Spray an 11x7 inch baking dish with cooking spray.
  • In a bowl mix together the pancake mix, milk, eggs, canola oil and granola. Stir in the blueberries and chocolate chips. Reserve a handful of chocolate chips and granola for garnishing after baking.
  • Pour the mix evenly into the baking dish and bake for 40 minutes or until the pancake batter has become firm and golden on top.
  • Immediately sprinkle a handful of chocolate chips and granola on top.
