Watermelon Chicken Salad with Pine Nuts and Feta
Salty and sweet, this watermelon chicken salad it's a perfect way to enjoy a light lunch that's packed with protein and vitamin C.
- 4 ounces baby spring greens
- 1 cup watermelon
- 1/4 cup pine nuts
- 1/4 cup feta cheese
- 1 cup grilled chicken, chopped or shredded
- 3 tablespoons lime juice
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1/2 teaspoon minced garlic
- 3 large mint leaves, minced
- Fresh cracked pepper
Place the greens in two salad bowls. Top each bowl equally with watermelon, pine nuts, feta cheese and grilled chicken.
To make the vinaigrette, whisk together the lime juice, honey, olive oil, garlic, fresh black pepper and mint leaves. Drizzle over the salads and serve.
