Ingredients
1Honeycrisp apple, cored and sliced
1/2cuppecans
1/4cupdried cranberries
1/4cupcrumbled goat cheese
1cupsshredded chicken
5ouncesmixed greens
1/4cupapple cider vinegar
3tablespoonshoney
2tablespoonsolive oil
1teaspoonhoney mustard
Salt and pepper
Instructions
To make the vinaigrette, add all the ingredients to a small container and whisk until well blended. Add salt and pepper to taste.
Place the mixed greens in a large salad bowl or in individual bowls. Arrange the chicken, sliced apples, cranberries, pecans and goat cheese on top of the greens. Drizzle with the vinaigrette.
