  • 2/3 cup sugar
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon salt
  • 3 tablespoons water
  • 1 1-inch thick slice of fresh ginger, peeled
  • Four large peaches, peeled and quartered
  • 1/4 cup lime juice


  • In a small sauce pan over medium heat, bring the sugar, corn syrup, salt and water to a boil. Stir the simple syrup constantly for two minutes until the sugar dissolves. Add a slice of ginger and stir for one minute more. Remove from the heat and let the pot stand for 10 minutes.
  • Using a handheld blender, purée the peaches, the simple syrup and the lime juice until smooth. Use a plastic pitcher to blend the mixture. It makes pouring the mixture into a 10-pop plastic popsicle mold easy.
  • Freeze the mold for about an hour before adding wooden popsicle sticks. Be sure to freeze the ice pops until the sticks are completely frozen inside the pops, about eight hours.
