Pasta: Choose your preferred shape, such as elbow macaroni, rotini, fusilli, penne, or rigatoni. Cook according to the package directions.

Chicken: You can use leftover cooked chicken or rotisserie chicken. Otherwise cook up boneless, skinless chicken breast or chicken thighs, cut into cubes.

Cheese: A sprinkle of shredded mozzarella cheese. 

Boursin cheese: For a rich and creamy sauce.

How to make this easy chicken broccoli casserole

  1. Preheat the oven to 425°F. 
  2. Cook pasta in a large pot of salted water until al dente, then drain, saving the pasta water.
  3. In a large pot over medium heat, stir together the Boursin cheese and chicken broth to create a creamy mixture. 
  4. Add up to 3/4 cup of pasta water to the cheese sauce if needed.
  5. Layer the cooked pasta in a baking dish, followed by the cooked chicken and broccoli florets. 
  6. Pour the cheesy sauce over the top of the dish. The sauce should thicken while it bakes. 
  7. Sprinkle the bread crumbs and mozzarella cheese over the broccoli.
  8. Bake in the preheated oven for 25-30 minutes, or until the broccoli is tender and the cheese is bubbly and golden brown.

Ingredients
  

  • 1/2 box penne pasta
  • 1 box Boursin cheese shallot and herb flavor
  • 1 cup chicken broth
  • 3/4 cup pasta water
  • 2 cups cooked rotisserie or leftover chicken
  • 2 cups broccoli florets
  • 1/2 cup panko bread crumbs
  • 1/2 cup mozzarella cheese shredded
  • Salt and black pepper to taste

Instructions
 

  • Preheat the oven to 425 degrees F.
  • If using raw chicken, chop the chicken into bite sized bites and sauté in a bit of olive oil until cooked through.
  • Bring a pot of salted water to a boil and cook the pasta until just tender or al-dente.
  • While the pasta is cooking, whisk together the Boursin cheese and chicken broth in a medium pot over medium heat for about 5-7 minutes or until the cheese has melted and the sauce has thickened slightly.
  • Drain the pasta, reserving the pasta water. Add up to one cup of the water to the sauce stirring to mix. The sauce will thicken during baking.
  • Transfer the drained pasta to a casserole dish. Add the chicken and broccoli florets and pour the cheese mixture over top.
  • Sprinkle the bread crumbs over the top and add the shredded mozzarella cheese.
  • Bake the casserole for 15-20 minutes until the broccoli is tender and the cheese has melted and browned slightly.
